Soft Gluten Free Sugar Cookies

My most favorite thing about this cookie is how soft it is. Moist, soft, chewy, melt in your mouth goodness. Most of the time I bake Gluten/dairy/soy free since my son stays free of those items most times. With a recent allergy test he is able to do dairy and soy even though we continue to watch those items we chose to make our old original sugar cookies. When you take out dairy/soy the cookies just turn out hard and crunchy and well I will admit although good they were not a favorite. I am almost mad that I didn’t double the recipe but generally with the old crunchy cookies we didn’t eat that much, this year we are left wanting more…..Good thing I made other goodies this year.

1 pkg (8oz) cream cheese softened
¾ cup of butter, softened
1 cup sugar
2 tsp. vanilla
2 ¼ cup flour
½ tsp. baking soda

Beat the cream cheese, butter, sugar and vanilla until light and fluffy with an electric mixer. Add slowly the flour with the baking soda added in. Mix well and form into a ball. Refrigerate at least 30 minutes.
Preheat oven to 350 degrees and roll out your dough in small batches ¼ inch in thickness. This dough rolls very well another reason I love this recipe. Cut into shapes with cookie cutters and put onto baking sheets. I use parchment paper to cook on which makes clean up and removal of cookie a breeze. Bake 18-20 minutes or until golden brown. Keep on the parchment paper or pan until cool as the cookie will be tender until then and subject to breaking.
Frost or decorate as you please. My kids had a ball decorating. I have two adult daughters and a 7 year old as you can tell by the variety of cookies on display. They had a lot of fun. What a time I had listening to them giggle and talk and enjoy the company and constantly tell their brother to frost the cookies not the inside of his mouth. He had so much sugar yesterday that he woke up hyper this morning. Oh boy but oh so good.

We already have our favorites picked out for Santa, and Santa will be one happy person this year with the goodies he gets. Of course Mr. Santa always shares with Mrs. Santa!

      We have tried many different GFflour blends and I will honestly say I love Tom Sawyer Flour the best. We have used them for 10+ years.

      All the recipes on my site use only Tom Sawyer GF flour unless I make something out of the ordinary, and I will usually specify what type of flour I use for those recipes.

        Thanks for your reply! I know several people that are gluten free for a variety of reasons and I am always on the hunt for good recipes. I can’t wait to see how they like these cookies.
