Red Meat is not my favorite, I am not against it, I just don’t like it. I think I was the only kid in the world that took an hour to eat their happy meal burger. I hated it. My husband, on the other hand, would eat nothing but red meat so I try to throw a steak dish into my cooking every once in awhile.
This recipe actually took me by surprise and I ate it the second night as leftovers too. It won’t be a staple in my diet for sure but if I have to eat red meat I don’t mind this.
serves 2 if you have big meat eaters
1.5 lbs flank steak (or very thin cut)
garlic powder, ground cumin, dried oregano, salt, pepper, chili pepper flakes
butter
2 large sweet onions
sugar
blue cheese
I didn’t measure anything, I wasn’t worried about calories and sometimes I just throw things together and hope the best so this recipe will all depend on how much seasoning you want.
Morning of the meal I unrolled my flank steak and I seasoned with garlic powder, ground cumin, oregano, salt, pepper and yes even red chili pepper flakes. (I went very light on the pepper flakes as I have a small allergy to chilis and I can’t handle the heat) I rolled it back up and kept covered in the fridge.
1 hour before grilling let the meat sit out at room temperature while sauteing the 2 onions in a large dollop of butter. Add more butter if you need to and sprinkle with about 3 tsp of sugar depending on how sweet you want them. The sweetness really does make a difference in the recipe. I like adding a small amount of sugar to onions when cooking for a flavor kick.
Set onions aside when done and grill steak on the grill or on a stovetop grill as we did since it was -13 outside.
Slice thin, (I tell my husband I want to see through it) and layer on your plate with onions and blue cheese. The combination of flavors was magnificent. I ate every bite and put some away for the next day.
