I made this loaf of bread in hopes of creating a gluten-free uncrustable for my son since school is starting tomorrow. I should have played with it long before now. See post on GF uncrustables. But I did come up with a very good bread recipe that rose very well and gave me a good size loaf.
Ingredients: 1&1/3 cup warm water, 4 eggs room temp, 3 tbsp grape seed oil, 1 tsp apple cider vinegar. Mix these all together.
2 tbsp sugar, 1.5 tsp sea salt, 1/2 cup dairy free powdered milk, 1/2 cup white rice flour, 1/2 cup brown rice flour, 1&1/3 cup sorghum flour, 1&1/4 cup potato starch (not flour), 1/2 cup tapioca flour, 1 tbsp xanthan gum, 4.5 tsp quick rise yeast. Mix together.
combine wet ingredients with dry ingredients and place in oiled bread pan, place in oven and bake at 350 until golden brown.
As I type I am wondering if I would get an even larger loaf of bread if I gave it 30 minutes to an hour to rise? worth a try next time.
