This recipe is so easy to convert any way you want. We have done just apple cake, apple cake crumble, apple cake struessel, apple cake muffins it always turns out delicious and definitely one of our home’s favorites especially for potlucks.
3 cup tom sawyer flour (or gluten-free flour mix of choice) ~ 1 Tbsp baking powder ~ 2 cups plus 2 Tbsp sugar (divided) ~ 1 cup vegetable oil (any oil will do, I like canola or have used olive oil) ~ 4 eggs ~ 1/3 cup orange juice ~ 1/2 tsp salt ~ 2 & 1/2 tsp vanilla extract ~ 4 medium baking apples (no sour granny smith unless you like a tart apple cake) ~ 2 tsp cinnamon.
In a mixing bowl combine flour, powder, 2 cups of the sugar, oil, eggs, orange juice, salt and vanilla. Beat until thoroughly combined. in another bowl toss the thinly sliced peeled apples with cinnamon and remaining sugar. (honestly this is the step where my kids use their own judgement and throw in more than what is called for….I let them depending on how my sweet tooth is doing that day)
spread 1/3 of the batter in a greased 10 inch pan cover with 1/2 the apples and repeat layers. spoon remaining batter on top. Sprinkle with more sugar or add a crumble and bake at 350 degrees for 1.5 hours or until golden brown. cool in the pan. after 20 minutes you can remove to a wire rack or we just leave in the pan. once cool you can add a powder sugar drizzle or just eat it plain.
This is so good, honestly I have a hard time waiting for it to cool off before I dig in. Never had a bad review with this recipe even from non gluten-free people.
