When one cooks especially gluten-free there is bound to be some flops and well I make a lot of flops. Take my bread for instance. it smelled so good almost like real home-made bread like we use to make and I was so hopeful till it fell out of the pan like a brick. Actually the inside was perfectly soft, springy and yummy but by the time you cut off the crust which was inedible it left you will little or nothing to enjoy. Oh well.
so today I try to make pretzels. we all like the Glutino brand pretzels however they have soy so I have to be very limited with them. todays attempt was not a success either but at least we get to eat these flops. I am thinking they would make a better bread stick than a pretzel but then again getting them tiny enough was hard and frankly I gave up. I made little sticks, big sticks, hugs, and hearts and finally exhausted I just made little round cracker shapes. they are edible but they are not pretzels.
Its weeks like this that I wonder why do I even try. Wasted expensive flour, wasted time, stress levels up. then I look over and see a cute little red-headed boy bouncing around the house and I remember it is worth it.
Crispy pretzels are twice baked or fried Theresa. It takes a knack. Soft pretzels can also take some practise. It took Jay 2 years to get a good one before she was fully happy, if I remember what she said.
