Gluten Free Burritos

Well I must say its been about 6 years since I have had a home-made tortilla that was even close to the old flour tortillas.   This is one thing I so totally miss that for a few years after diagnosis the mere driving by a taco bell would reduce me to sobbing tears.   So many times I sat outside the taco bell crying, hating my life, wanting to just cheat and eat gluten.

Yes my friends I was a die-hard bean burrito fanatic.  In fact any time I was left on my own I would go to taco bell and get one bean burrito and one enchirito for lunch and the same for dinner.   plus a bag of chocolates and have 5 a night.  Yes life was good until my celiac diagnosis.

but I recently received a tortilla press and cooker from a friend and although I already made crackers, (see previous post) I reluctantly made tortillas thinking it would fail miserably.   It took about 1/2 the batch before I figured it out and turned out some pretty nice tortillas.     I loaded them up and rolled them up and gulped them down like I was a starved little kitten.  Wow, not perfect but it felt good.  I even had taco bell sauce (yes I stole some of those cute little packets on my last visit……um yes I still visit but I only eat the tostadas and its very rare)

There is a photo but honestly it didn’t do it justice.  it rolled it was sturdy and it was edible.   my son even ate a peanut butter and jelly tortilla, well most of it as it was more fun just to squeeze real hard and see all the stuff shoot out.

I am happy tonight.  I can drive by taco bell tomorrow with my head held high.  Oh and I also made great spanish rice!  yep just like what I use to when I bought those little boxes of rice a roni.  ok so that was a cheat.  I just took the spice packet out of a box that was thrown away and used my own rice and broken up angel hair pasta for the vermicelli.

I really need to get back to posting recipes, for that I am sorry to my followers but I have been so busy lately.   tomorrow I want to do jello and muffins.  Stay tuned.
