You can make an ice cream cake! My kids got into a kick and I made two of them a year for like 5 years. My cakes were to die for or that’s what all the kids said anyway.
Take a spring form pan ( http://www.foodnetworkstore.com/p-312710-Nonstick-Springform-Pan.aspx ) and bake your cake. When cooled take your cake out and cut it into two round circles right through the middle. Place one layer back into the spring form pan make sure all sides are secure to prevent leakage of ice cream. Take your ice cream (so delicious makes several flavors GF/CF) and let it melt just slightly enough to stir and layer on top of your cake layer. If it’s a little runny don’t worry about it, that just soaks into the cake or freezes right back up. Then place the other cake layer on top of that. I store mine in the deep freeze overnight. Then pull out and frost and place immediately back into the regular freezer. Putting it in the deep freeze overnight makes it hard enough to work with the frosting before the ice cream melts. Its time consuming but really good.
