I have a love hate relationship with food. I hate to cook but I love to eat, and I am not a great cook but every once in a while I come up with something pretty dang cool even when I am missing half the ingredients to my recipe. That is okay when I improve and recreate then it becomes my recipe. Just like this stir fry How I missed so many ingredients I don’t know since I spend hours making grocery lists and re checking and blah blah blah. but this one is a keeper, I even changed everything around on my written copy to do the same thing I did this time.
3 tablespoon rice vinegar
3 tablespoon honey
3 tablespoon lower-sodium soy sauce (gluten-free tamari)
Dash of chili powder or two depends if you like spicy.
1 lb deveined medium shrimp tails off
Combine vinegar, honey, soy sauce, chili powder and marinate shrimp in mixture for about an hour.
Take 4 ounces uncooked flat rice noodles (pad thai noodles) (I used a brown rice fettuccine noodles however I will go back to the rice noodles for future recipes.) cook according to directions leave a little aldente and rinse with cold water, set aside
When Ready to cook:
add a few tablespoon of olive oil in a hot pan. Add the following.
1/4 to 1/2 salted peanuts or any nut. I like them I add 1/2 cup
1 tablespoon thinly sliced garlic
2 teaspoons chopped peeled fresh ginger
1 green sereno chile, halved
saute them up for about 5 minutes or until garlic and ginger and are flimsy. Remove them from pan.
Add to saute pan the following:
sweet bell peppers, I had a red one on hand so used it
3 large carrots chopped into match sticks
1 small can of sliced water chesnuts
1- 15 ounce can drained bean sprouts.
Saute for about 7 minutes then add in your shrimp including marinade sauce, saute for about 3 minutes until they are warmed and pink (cooked through if not pre cooked) and add back in your peanuts and peppers along with noodles. mix til well combined and warmed all the way through tossing constantly.
Serve with extra soy sauce if you like more of that flavor. I didn’t need additional flavor personally.
Don’t eat the sereno chili unless you really like hot stuff it’s just there to add a spice and kick. hubby ate it but then he also eats jalapeno’s like apples. yuck.
I just finished leftovers for lunch. (sneaky mommy trick. I took out my lunch portion before I served dinner because I knew it would all go if I didn’t. I was right everyone loved it.)
