I am a spoiled little princess at my home, maybe not all the time but in the month of May I rock! May is my birthday, our wedding anniversary and of course mother’s day. I no sooner open one gift and the get more. this year I even got a week’s vacation with my sister. May is my favorite month as you can imagine.
so the news! I got a vitamix. I have been wanting one forever. Okay only since I started eating healthy before that if you told me to drink a green shake I would have just scoffed at you as I downed my venti latte and apple fritter.
Today was my first run with it and I went all out and put it to the test of fresh whole, home-made soup! Oh yes I did. Wasnt’ going to make no sissy smoothie I wanted to see this thing chop, dice, puree and cook. So I took a whole tomato threw it in, 4-5 carrots, a handful of kale (have to watch my greens) a clove of garlic, some onion, a little chicken broth and little almond milk and a tbsp of tomato paste. and cranked her up. First off it turned a gross color but that was from the kale addition. then it started getting hot, then I couldn’t stand it so more I poured a bowl and this is what I am eating for lunch. Oh my, total goodness. I plan to post a lot for vitamix and I know some of you do not have one so I will make sure to have a different folder just for them so you’re not boggled down when you look for recipes.
the tea thermos you see with my lunch was another gift. I got so many new things. I guess I have to go healthy and stay healthy now. I kind of let my self slip this month with the vacation, cakes, and just good things to eat. but I am back on board.
Oh and I have all the stuff ready for homemade ice cream tomorrow in my vitamix. Peanut butter ice cream that is gluten/dairy/soy free for my son’s end of the year ice cream party at school. All the other kids will be jealous!
