It’s not very often that I tweak a recipe and still have it come out yummy. Before you ask, Yes I was playing with my mini muffin maker again. You just can’t beat the cuteness and ease of little mini muffins!
With that said I must say these taste very good and I am happy to share a new recipe with you.
1 cup Tom Sawyer flour, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp sea salt, 1/2 cup overflowing applesauce, 1/4 cup honey, 1/4 cup organic almond butter (I used the creamy oily almond butter on the top so if you don’t add 1 tbsp more oil) 2 eggs, 2 tbsp oil, 2 tbsp brown sugar. and I just realized I left out the 1/2 tsp vanilla so you can add it or not. Also depending on the flour you use, you may need just a little water. recipe called for orange juice but I left the extra liquid out among other things.
I threw it all in a kitchen aid mixer and let it go while I did other things, few minutes later I had a batter the consistency of pancake dough and I poured it into mini muffins and baked. 1/2 way through I sprinkled the top with sugar. My son will eat muffins more readily if he sees the sugar on top. bake until a toothpick comes out clean so time will vary depending on size of muffin pan. I baked at 400 for about 10 minutes.
I seriously wanted to sit down with a few and a cup of coffee but alas I did not make these for myself so I will leave them be for now.
They do look good Theresa. So glad it worked out well. Hope Indy scarfs them right down and wants more.
