Pacific Soups

Ever since going gluten free I have yearned for one of my old favorites. Campbell’s tomato bisque soup.  I was raised on tomato soup and grilled cheese sandwiches.   It has been a comfort food for me as far back as I can remember.   I use to make this for lunch at least once a week, for dinners at least once a month and frankly I miss it.  Taking gluten away from me is one thing but taking comfort and memories is another and frankly I am very bitter.  If I could make a plea to Campbell’s soup makers I would say Please Please make more soup gluten free. (honestly I would love dairy and soy free too but lets take it one step at a time)

So back to tomato soup, every time I see a new Tomato soup product I have to try it.  Today is no exception I found Pacific Tomato bisque and I was so happy to see it on sale.  $3.49 for a single serve box.   I would hate to buy it when it wasn’t on sale but like I said I am a sucker in finding my old comfort food.

Did it compare?  Sadly no.    Although it was a good soup I found to have a strong acid taste!  Yes I know its tomatoes.  but there is a way to cut the acid down and I ended up putting some red cooking wine in to cut the acid and some powdered milk to tame the extreme tomato taste.   I likened the taste to finding very bitter tomatoes and just juicing them and throwing in some of the pulp.    Now don’t get me wrong it was a very good soup just not good enough for me.

With a sad heart I continue my quest to find a pre-made tomato soup and my heartfelt plea to campbell’s to make their soups gluten free.  My favorites are tomato bisque, cream of mushroom, and of course bean with bacon.   Come on Campbell’s!

I will give Pacific a plug however because they did come out with a condensed soup which has been a joy cooking with.  I have missed that ease over the years of condensed soups (its really easy to make your own by the way) so I give them kudos for that.  tomorrow I am making smothered pork chops like my momma use to make with the condensed cream of mushroom.  I am excited about that.   I also like several of their other soups and products.   They use quality ingredients and a wide range of products.   Be sure to check them out.

    I have not had the tomato, but have had the no sodium chicken broth and to me it tasted like yellow greasy water…….lol. I bought it because it was $2.49 a box and I had $1.00 off coupons. Not impressed.

    Try this recipe. Takes less than ten minutes and SO good.

    Tomato Bisque
    4 – 6 servings

    2 (28 ounce) cans tomatoes (stewed, diced, or crushed)
    2 cups Mimicreme (unsweetened)
    1 T dried basil
    1/2 teaspoon garlic powder
    1 1/2 teaspoons salt
    Pepper to taste
    3 T Sugar or Agave Syrup

    Directions
    Place all ingredients except Mimicreme in pot and heat to a simmer. Use hand blender to puree until desired consistency. Stir in Mimicreme and remove from heat.

    I will have to try it, thank you. I can only get mimicreme at my health food store which I travel to once a month so it may be a little while but I will get back to you on how it was. I have another recipe from a very good friend that I really love as well. (not campbell’s but my favorite tomato soup next to it) I make a big pot every couple of weeks. I get teased a lot becuase they ask what’s for lunch, oh wait tomato soup……….I am predictable.
