Chicken and any veggie stir fry

I love a meal that is easy!  I just don’t have time to cook fancy meals but I do so love to eat.   My stand by on any busy night?   Chicken and any vegetable that is handy, my favorite however is okra.

I buy 5-10 lbs of fresh organic chicken breasts and I bake them all then shred the meat into 4 oz servings.  Yes this makes quite a bit but I have chicken for both lunch and dinner so the chicken goes fast.  plus when I have to be out I just grab a baggie of chicken and take it with me.  I like the taste of fresh no seasoned chicken breast.

I saute my chicken and  fresh veggie (brocoli, Brussel spouts, chard, greens, spinach you name it, there isn’t a veggie I haven’t used except peas and corn and of course no starches like potatoes)  in water with some celery salt and smoked paprika.  those two spices are my favorite with chicken and all the vegetables seem to like it too.   (only use organic celery salt that uses sea salt)  the smoked paprika is heaven on these and just so good.   about 4-6 oz of veggie and you have this humongous plate of goodness.  enough to feed a family of 3 but its all for you.

some may not like this but I don’t eat starch, sugar, preservatives so my tastebuds scream for fresh whole foods.

HERE IS ANOTHER HINT:  Did you know there are no fresh vegetables, fruits, or meats (fresh!, not canned, boxed, packaged or preserved) that contains gluten!  Eat all you want and enjoy.
