Gluten Free Circus Cookies

I would love to say these are a childhood memory after all I have so many great ones about food, but I didn’t discover these little beauties until my adult years. First bite I was hooked.

I remember studying (years ago) for some tests I had to take and I put in some long night hours since I had kids to deal with during the day. These little cookies and a pot of coffee kept me going all night long. After my studying days, they became just an occasional treat. I had to keep it at occasional because I can and will eat the whole bag given the chance. But last 10 years they have been off-limits due to Celiac Disease.


My son who is 9 has never had the joy of tasting circus cookies but for the rest of the household we have and I just have to share with you our amazing remake of these that are gluten-free.

Easy Peasy cookies! But seriously you want to hide them. I shared with everyone in the house and it was like a shark frenzy in bloody water. I barely got away with my bag (yes I said mine) just in time to save some and hide them.
I am thinking this may have to be a new weekly thing in our house, after school starts up again since it will be easier to make them without anyone knowing but me.

    Pinned! I am so excited to see these, I am gluten free and finding yummy snacks to nosh on is difficult. Especially when you need just a bit of sweet, spoiling and sugar! These are it! Thanks so much for sharing.

    OMG,
    THANK YOU! as I am typing I am eating handfuls of Mother’s circus cookies.
    That’s right, I can hoover an entire family sized bag all by myself. *dusts off left shoulder*
    One teeny tiny problem there…now I have been what I call “Glutenized”.
    Let the stomach illness, migraines, irritability, acne, hot flashes and itching ensue. I can feel the sweat on my brow already. Ugh…
    I have to ask myself when I do these things if it was worth it and the answer is always no, no matter how you break it down.

    But these are my weakness!!!!
    so once a year I binge and both I and my husband face the consequences.

    But NOW!!! You have saved my life! My marriage, my stomach, my head (the list goes on)

      Your post makes me smile. I loved circus cookies too back when I could eat them. Now I can have my cookies back and it makes me so happy, plus my youngest gets to enjoy too when I share.

    I cannot wait to try this!!! Mother’s Circus cookies are a must for our family vacations. I would like to make a batch prior to leaving for a week long adventure and I already have a lot on my to-do list. How long would you say they will be good for? I was thinking of making them maybe one week before we leave.
