I shouldn’t have even been in the kitchen after a full weekend of failed attempts with cooking. But when things go bad I get mad and just try to turn something out which I must learn from the past and know that it just doesn’t work that way. So you will see by my crackers although good are a product of my total frustration!
1/4 cup teff flour ~ 1/4 cup brown rice flour ~ 1/4 cup tapioca flour ~ 1/4 cup millet flour ~ 1/4 cup sorghum flour ~ 1/2 tsp guar gum ~ 1/4 tsp xanthan gum ~ 1/2 tsp salt ~1/4 tsp paprika. Put this all in a food processor and just whiz. Add in 4 tbsp coconut oil til crumbly, 1/4 tsp vanilla, 1.5 tbsp honey and 1/4 cup water. if it isn’t moist enough just add water 1 tbsp at a time till good dough to work with.
this is where I got lazy and my anger took over and I just threw the whole ball onto parchment paper and flattened out, made squares, forked it, salted and threw into the oven literally threw it into the oven. The result is cute little crackers that are okay.
Flavor wise I would play with what ever flavors you like, I will try sweeter, savory but the crunch I really liked. I think mixing the gums really has a unique effect on the crunch. I really like it. next project to take out old recipe’s and try the mixture of gums.
by the way I am done cooking for at least a week!!!!! can’t handle the stress anymore for a while.
