This was a throw together of some things I had leftover from other dishes throughout the week. Although not a new idea as there are millions of cheesy ham potato soups and potato ham and cheese soup recipes out there, but I had these three ingredients left over and threw it altogether for a wonderful meal.
I took my bag of leftover potatoes that were sprouting eyes menacing me from my pantry every time I walked in. It was almost like their eyes grew bigger and stared right into my soul. so I said you are gone! and I peeled them and cut them into large chunks and placed them in my pressure cooker. I then took a poor lonely onion that had been sitting there by itself for a good two weeks and I diced him and placed him in the pressure cooker as well. adding just enough water I let this cook (after rattling point) about 5 minutes. when It was done I stirred and some of the potatoes turned to mush (perfect) and some stayed in chunks. I diced up my leftover ham and 12 oz of leftover velveeta. (I know who has left over velveeta? but I really couldn’t eat the whole 12 oz and I bought a large box of it for another meal) I added bamboo salt (I am sure any sea salt would work) and pepper and let it softly simmer until all was combined. I had enough water to make it a thick creamy soup but if you don’t you can add more water or milk (since this is not dairy free why not)
Leftover soup is haunting me as I type this. I am a sucker for cheesy goodness and this was cheesy goodness wrapped up in a warming soup. And my fridge is cleaned of the ham and the potatoes no longer “look” at me when I walk into the pantry. Perfect meal. Oh and I served this with some home-made bread, neat recipe that reminds us of sourdough. Not a big fan of sourdough but it went well with potato soup.
