My Lazy Day Dinner

The hardest part of this dinner was scrubbing the potatoes so that  I could slice them…………

I took out 4 Udi’s gluten-free hamburger buns which I found on sale at Fred Meyers for $2.00 and put them out to thaw.

I took left over chicken from a whole roasted chicken we had the other night and shredded it in a pan and added enough BBQ sauce to lightly cover it. (we are watching our calories) and heated it slowly so that the flavors would melt together nicely giving it a slow roasted taste.

scrubbed and sliced three potatoes which I lathered in EVOO and then sprinkled with lawry’s seasoned salt.   I put them on a baking sheet and put them in the oven at 350 for about an hour until golden brown.

I put the BBQ chicken on the warmed buns (warmed in the oven at the very end) and put some potato slices on the plate along with a sliced apple and some left over veggies.

Easy, fairly healthy and very filling.

It has been blowing and rainy for several days now and that just zaps all my will to be productive it seems.  Most people get in the kitchen and cook when dreary outside but not me I like to be different and stay as far from the kitchen as possible.

Best part was there was leftovers enough to make a wrap for my daughters lunch tomorrow.
