PB&J Muffins

every morning my son has nuttbutter and jelly on toast.   Every Morning!   I get tired of making the same thing especially when he also has one for lunch and sometimes dinner and its his favorite snack.     It has been this way since he was 3 years old.  He loves it.

Today I decided to make PB&J muffins.  This way he can just pull one or two (I will have to specify amount or he will eat the whole batch) for breakfast and snacks any time he wants.   (I don’t worry about weight; in fact Nutbutter has been the only thing keeping weight on him) I was quite pleased with the results today.

After searching the net, I found some that put jelly in globs between dough, and some that injected it after the muffin was baked…..yeah no.    I am going to make this as simple as I can because that is just who I am.

Add in order of ingredients and mix each time until combined.

1 cup of milk ~ 1 large egg ~ 3/4 cup sugar ~ 1/3 cup of jelly ~ 3/4 cup peanut butter (or any nutbutter) ~ 2 tsp baking powder ~ 2 cups GF flour blend.

That is it.   mix well (note that the jelly won’t dissolve and you really don’t want it to)

place in muffin pans.  I like using my silicone baking liners.

Enjoy.  they got 4 thumbs up from my son if you count his big toes as thumbs, He did!
