Pepperoni, pepperoni, pepperoni

What can one do with leftover pepperoni slices?   We make pizza from time to time and every time my husband gets a big package of pepperoni slices, each time I put the unused package in the freezer, this continues on till I have 4-5 packages of 1/2 used pepperoni packages and it just frustrates me to no end.  So I started on a quest of how I can use these up.

1.  While frozen put them in a food processor and turn them into crumbles.  you want to use frozen ones or you will have a paste vs crumbles.    Put the crumbles in a pan and saute them up until they are crispy.   You now have toppings for salad, baked potato, casseroles, what ever you can imagine needs a bacon like crumble.

2.  Again crumble them up while frozen but perhaps leave larger chunks, that is up to you.  I personally love them small like bacon bits.  I am not a meat eater so chunks of meat are not my thing.  You can now add this to sauces, spaghetti sauce, gravy sauce over biscuits etc.   Again as far as your imagination can take you.  I personally used in spaghetti sauce but I am excited to see what other sauces I can make up.

3.  Crumble yet again and you can re-freeze for later use.

4.  Crumble (that seems to be the theme today) and add it meat.   Add to ground beef for tacos?  on top of a roast for a flavor boost?   I added it to meatloaf myself and it was good.  If you add some pizza sauce its like  a pizza loaf.
