Saint Patrick’s Day Cake

I hope you all had a wonderful St. Patrick’s day. We had a great dinner of Corn Beef and Cabbage and then a wonderful green cake for dessert.

Pistachio Pudding Cake

2 1/3 c Tom Sawyer Flour or GF flour mix

1/2 t xanthan gum

1 T baking powder

3/4 t salt

1  c sugar

1/2 c safflower oil

1 c almond milk

3 eggs

1 t vanilla extract

a tiny splash of mint extract

1 package pistachio pudding mix

Preheat the oven to 350. Mix flour, xanthan gum, baking powder, salt, and sugar. Add oil, milk, eggs, vanilla, mint, and pudding mix. Beat on medium speed for 2 minutes. Pour into two 9″ round greased pans, and bake for 30 minutes, until lightly browned and a toothpick stuck in the middle comes out clean. Let cool, then remove from pans.

    would love to win this! I use coconut for cooking but I, also, like to make lotion. I use half coconut, half olive oil and a quarter bees wax. Awesome!
