Have you ever wondered if spaghetti squash was for real? I have heard stories that people use this stuff to use in place of regular spaghetti noodles but did I believe those stories? NO! Currently I am staying sugar and starch free but was craving spaghetti like a kid for chocolate at Christmas and with no other choice I tried it. Step one buying the squash, step two letting it sit on my counter for many days afraid of the disappointment, step three getting on the internet and actually looking it up, step four what the heck I made it. They are not kidding when they say microwave it to get the skin soft enough to cut through. I went through butcher knives thinking I can do this….fail. microwaved it for about 10 minutes and cut right through it then scooped out the seeds which by the way are good roasted along with the squash. 50 minutes in the oven flesh side down gave a very neat product. you take a fork and just start loosening the fibers and it comes out like spaghetti. (I can’t believe I haven’t tried this before)
So I am curious at this point and my first bowl I smother in spaghetti sauce (prego veggie smart is sugar-free) and it is awesome! Still curious I make a second bowl but just drizzle some EVOO on it and a light sprinkle of sea salt. Oh my goodness just as good. I would have tried a dessert spaghetti if I hadn’t been so full that I could hardly move. That will be my next project.
Over all I was so happy with the results and will now use spaghetti squash in place of all my dishes calling for pasta to a certain degree. I am sure there are some this would not work with but I will cross that bridge when I come to it.

Here are two different ways to cook the squash thanks to my wonderful friends at gfcfrecipes@yahoogroups.com. You can pierce it with a fork and bake, thus eliminating the need to cut it in half then lay face down to roast which I thought was the hardest part or place squash in some water in the crock pot, no need to peirce and you just set it out and leave for the day.
