I made a dish tonight that reminded me of those boxes of hamburger helper I use to get 6 years ago prior to needing to be gluten-free. This was not a good thing since who wants to eat cheaply made meals from a box when one can make delicacies from scratch; but on the same note it was quite fun to relive the old days. (okay I admit I miss the ease of the boxed meals, but not the sodium, preservatives, and junk in them)
I laugh when my husband mentions the grocery budget. All his friends of course can eat for a certain amount of dollars per week and well I seem to spend double that on food. Well lets see, 1) we eat allergy free most times that is more expensive 2) we are a family of five where most of his friends are just two or two with small kids. 3) a box of hamburger helper and a pound of hamburger every night is cheap! Maybe if I serve dinners like this every night he will up my grocery allowance?????
Really it was a decent meal and I will have it again but I can’t get rid of the feeling I went back in time and just served my family a meal from a box…………….
1 lb ground beef, 1/4 cup chopped onion, 3/4 cup water, 1 pkg taco seasoning, 3 cups spiral gluten-free noodles, 2.5 cups V8 juice, sour cream for garnish. (can use a dairy free sour cream but that would be soy based. I would rather do dairy than soy)
Cook up the ground beef with the onion and drain. add the seasoning, water, V8 juice, and pasta. simmer until noodles are done and serve with a big dollop of sour cream.
So simple and easy and I used a spicy taco seasoning so it had a kick to it for me. My husbands response was “what kick” but he eats jalapenos for breakfast.

Have you tried cashew sour cream yet? It’s pretty darn amazing.
Never heard of it actually. Is it something you can buy or something you make, never have seen it in stores.
