1 lb fresh ground turkey (local or from someone you trust to make pure meat with no additives)
add to meat 2 carrots finely minced in food processor, 1 small to medium onion minced finely in food processor (basically you can get rid of all your vegetables that are on their last days, just finely mince in food processor and add) spices of your liking such as garlic powder, sage, italian seasoning. Just make sure they are pure spices. Add two organic cage free eggs and 1/2 cup quinoa flakes and one small can of organic tomato paste. Let sit for an hour to let everything fuse together. if you find your meat mixture is a little too moist you can add in some more quinoa flakes. Either put into a bread pan for a loaf or muffin pans for individual meatloaf. I usually do the later for portion control. top with a sugar-free ketchup or tomato paste and bake at 350 for approximately and hour. check throughout to make sure it’s not getting over done or let cook more. use a thermometer for this.
Yummy, low calorie, awesome way to hide vegetables for your kids, awesome way to use up leftovers, and the muffin meatloaf are easy to take on the go.
