Heat oven to 350 degrees
Melt butter in saucepan over low heat and add in sugar and cocoa. stir until blended and remove from the heat. Add in eggs and and stir until blended. (note that the saucepan should have only been heated over LOW heat so it shouldn't be hot enough to cook the egg). Add in the rest of the ingredients and and mix. Fold in chocolate chips if using.
Bake 30 minutes until they begin to pull away from the sides and begin to crack on top.
cool completely before cutting.
* Can use palm shortening or other butter substitute of choice for dairy free
* If using another gluten free flour add in guar gum if your mix doesn't already include it.
