In a small bowl combine egg whites, vanilla, almond, milk and sour cram. whisk until blended and set aside.
whisk all the dry ingredients until well mixed in your kitchen-aide or mixer.
Slowly add in small amounts of the softened shortening and beat until it is all incorporated into the mixture and is dry (no chunks of shortening)
Gradually add in 1/2 of the wet ingredients and mix until incorporated. Add in the remaining egg mixture and beat until the batter is thick and fluffy.
Its now ready to do whatever you want with it.
Best cooked in a 350 degree oven.
cooking time will depend on what method you are using (cupcakes, cake etc.)
