Chicken Cordon Bleu

I have always seen these offered at fancy restaurants, I have heard about them on tv I think I even saw one once at a function.   But I have never prepared one or ate one so I thought I would try it tonight.

Ingredients:  Chicken Breast, candian bacon, swiss cheese, GF flour, paprika, butter, white wine, chicken boullion, heavy cream, cornstarch, salt and pepper. (note:  I did not make this dairy free but it can easily be done that way using a coconut cream, EVOO for butter and cheese sub)

I took 3 chicken breast and cut them in half lengthwise.  I pounded them as thin as I could without putting holes in them and salted and peppered them.   I had a stressful week and any one who knows me knows I pound chicken to relieve stress so this was a great meal for tonight.    I then placed a slice of swiss cheese and two slices of candian bacon in the middle and rolled it up.  (I think I might go with a provolone next time or even a Muenster)  I then made a mixture of 6 tbsp flour and 1 tbsp paprika and coated the rolled chicken in them for a nice thick coat.    I then browned all sides in 6 tbsp butter.   Once browned I added 1 cup white wine with a cube of chicken boullion in it.    I let simmer 20 minutes covered.   I removed chicken once done (I cut one open to check doneness)    and added 1 cup heavy cream.   I also added 1 tbsp cornstarch to thicken it up.    I salt and peppered it and poured some sauce over the chicken when serving.  As you can see from my photo the sauce was my favorite part so I had a lot.

I thought it was very yummy and my chicken hating teenager actually ate the whole thing.

    Sure looks good. My husband loves swiss cheese, muenster too, so he’d chow down on either version . I love provolone, so that would be my first choice, but muenster sounds good too.
