Lately I have been having a lot of fun with our new diet. Trying to find creative ways to keep the family intrigued with their food choices can be hard sometimes. Tonight’s dinner was a little difficult as I wanted a Shrimp Scampi but I couldn’t use butter. There is a way around everything.
Step One: Make the spaghetti squash. I absolutely love this veggie and it makes such wonderful dishes.
I always pierce mine and place in the microwave for a few minutes to soften the outer skin. Skipping this step I find makes it too hard for me to cut.
Once the skin is softer, take a large knife and cut it in half. Scoop out the seeds and place into a pan with a small amount of water in the bottom. You can then either continue to microwave or bake in the oven at 350 degrees until tender.
Once tender, you get to have the fun of running your fork through it to make the spaghetti. I find it fascinating.
You now have a very large bowl of spaghetti squash noodles.
Tonight I paired this with “Mock” shrimp scampi.
Since I couldn’t use butter I used oil and butter flavoring along with garlic, parsley, and chili flakes.
The result was quite a delicious shrimp. After they were sautéed I put in some noodles and tossed them around so that they would soak up the flavors.
Along with that I had a salad and cantaloupe. Over all this was a wonderful dish, low carbs, low-calorie, and dairy free.
Who said diets can’t be fun?
