What happens when you are still trying to do low calorie meals but have a craving for one your old favorites that is usually stuffed, breaded and fried? You amend it of course and it it really didn’t turn out too bad. We put it on our list to definitely have again.
Chiles Rellenos Egg Souffle
A lower calorie version of fried Chile Rellenos.

Notes
* cheese sticks make it easy to stuff peppers but I am partial to shredded cheese.
* chiles can be mild to hot depending on your taste.
Ingredients
- 4-8 oz peeled whole green chiles, drained
- 4+ oz of cheese of choice (we like Mont/Jack)
- 2 oz diced pimentos
- 4 eggs separated
- 1.5 cups milk
- 1/2 cup GF flour of choice
- 1/4 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- Salsa to garnish
Instructions
- Heat oven to 350 degrees
- spray a 2 quart dish with cooking spray or use individual serving dishes
- stuff chiles with cheese of choice and layer in your pan
- sprinkle pimentos over your chiles
- in a large bowl mix egg yolks, spices, milk and flour
- in a medium bowl beat egg whites until stiff peaks form
- gently fold in egg whites with your egg yolk mixture until no white shows.
- spoon mixture evenly over your chiles
- bake for 30-40 minutes until a knife inserted comes out clean
