Bacon Wrapped Chicken

This is very good served over white rice.  However to make it more healthy you can serve over brown rice.

cooked rice ~ 2 cups (1 jar) orange marmalade. 1/2 cup melted butter or if you are dairy free use Earth balance spread ~ 2 tbsp worcheshire sauce ~ 5-6 chicken Breast ~ package of bacon.

Mix orange marmalade, butter and worcheshire sauce. Place the cooked rice in baking pan and layer thin chicken breast in pan. layer bacon on top of chicken.  Cover in sauce and bake until brown at 375F.  When done place under broiler to crisp the bacon.  Watch carefully.

Note:  this is hard to convert taste wise into sugar-free.  however it can be done by buying just fruit spread with no added sugar, two jars usually equals a full jar of sugar filled marmalade.   You will have to find a bacon that doesn’t include sugar in the processing, which will be hard to find.    So I would suggest keep the sugar content in this meal and use it for a once in a while treat.   It really is that good!
