Soft Pretzel

best right out of the oven when warm.  Read all directions before preparing

1 tbsp active dry yeast ~ 1/8 cup warm water ~ 1 & 1/3 cup warm water ~ 1/3 cup brown sugar ~ 5 cups Gluten free flour mix ~ 4 tbsp baking soda ~ Coarse salt.

dissolve the yeast warm water.  Stir in remaining warm water once yeast foams along with brown sugar and flour.  mix until smooth and well mixed.    Use hands to roll out dough into snakes.  twist into traditional pretzel shape or braid.   Heat oven to 475F and fill a saucepan with water.  pour in baking soda and bring to a boil.   Place twisted pretzel dough in water for 15 seconds until dough is golden or yellow in color.  remove pretzel from water and place on a salted cookie sheet.   salt top of pretzels too.   bake in the oven for 8-10 minutes until golden brown.

Lots of work but very good.
