Hello! I am Theresa’s daughter Alysha. Periodically I will be posting recipes that I try and love. My first post will be a delicious chex mix I discovered this fine evening. My usual breakfast is a chex mix modified from the original recipe to suit my taste. I like having chex mix on hand because I can eat it in the car on the way to work. This week I had a bit of a sweet tooth so I visited the Chex website and found the caramel corn recipe. Naturally I modified it a bit.
Ingredients
- 4 cups of popcorn
- 4 1/2 cups corn and rice chex (I mix the two)
- 1/2 cup nuts (I used roasted unsalted peanuts)
- 1/4 cup butter
- 1/3 cup brown sugar
- 2 Tbsp agave nectar
- 1/4 tsp vanilla
- 1/2 tsp cinnamon
Directions
In a large bowl combine popcorn, chex, and nuts. In a saucepan over medium heat, melt butter. Stir in brown sugar and agave nectar. Bring to a boil, stirring constantly. Let boil for 1 minute. Remove from heat and stir in vanilla. Pour over chex, sprinkle cinnamon, and stir to evenly distribute. At this point you can microwave it in the bowl but I decided to bake it instead.
- Microwave option: 5-6 minutes, stirring every minute. Continue stirring while cooling to break it up.
- Baking option: Bake for 30 minutes at 250 degrees, stirring every 10 minutes. Continue stirring while cooling.
As delicious as this fantastic chex mix was, it was also a little sweet. Probably more suited as a dessert or a party food and not breakfast. In the future I will bring this yummy treat out while entertaining.
