Gluten Free Soft Pretzels

Gluten free soft pretzels?

One of my daughters favorite memories is going to the mall with me and getting a soft pretzel.    Its one of my favorite memories too and I am glad that I could share that with my kids.

With Celiac disease we can no longer do that; but we can create our own and enjoy as many as we want vs the single one you get at the store since they are so expensive.

Today we did just that, we created, we baked and we ate them all.

These are simple and easy to do, my 10 year actually helped make them as you can see by the photos, His pretzels were angry birds  and the triple twist.   Love his imagination.

This is what you will need:

1.5 cups of warm water (baby bottle temp), 2 1/4 tsp active dry yeast (instant works too), 1 tsp salt, 1 tbsp sugar, 3-5 cups of Gluten free flour (Tom Sawyer), 1 large egg, course sprinkling salt, water, baking soda and parchment paper.

Preheat oven to 425 degrees.

Put a pot of baking soda water on to boil; approx 9 cups of water to 1/2 cup baking soda.

  1. Dissolve yeast in warm water using a large bowl or stand mixer.  let set for about 1 minute.
  2. Add salt and sugar and mix.
  3. slowly add 3 cups of Tom Sawyer Gluten Free flour (other GF flours work just as well).  Add 1 cup at a time mixing with a wooden spoon until the dough is thick.   Can also use the dough attachment on your stand mixer.
  4. Add additional flour if need until it’s no longer sticky.
  5. take small portions of the dough and roll into long ropes and shape into pretzels or whatever you wish.

6. Take pretzels and dunk into your boiling baking soda water for 2o seconds.   Have the kids count if they are helping you. Do not over boil!

7. Take the pretzel out and place on a cooking sheet lined with parchment paper.  Repeat with all the pretzels.

8. Beat the egg and do an egg wash on all your pretzels and sprinkle with pretzel salt or leave plain.

9.  Bake in the oven for 10 minutes, then turn to broil for an additional 5 minutes paying close attention so that they don’t get too dark.

10.  Allow to cool slightly and enjoy.

Variations:   We took small bite sized pretzels and after baking we doused them in butter, then sprinkled with cinnamon and sugar.
