No Banana-Banana Bread


My son has been allergic to Bananas since he was just a baby. Sadly it is an airborne allergy so we cannot even have bananas in the house. I have missed bananas so much and my friends know this so they are always sneaking me bananas when we meet up or slipping me some homemade GF banana bread in passing. It has become somewhat of a fun life living like this with my friends supporting my banana addiction whenever they can.

Now I don’t have to have them sneak me banana bread. I had a “why have I never thought of this moment” earlier and I put it to the test today. I made No banana-banana bread.

No Banana-Banana Bread

Ingredients:

2 Cups GF flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt (or 1/2 tsp sea salt)
2 eggs
1 cup of sugar
1 cup no sugar applesauce
1 cup grated zucchini, all liquid squeezed out
1 tsp vanilla
2 Tbsp imitation banana extract
1/2 cup veg oil
1 tsp cinnamon

Preheat the oven to 350 degrees F.

In a large bowl combine the baking soda, baking powder, salt, eggs, sugar, applesauce, vanilla, banana extract, oil, and cinnamon. Whisk until fully combined.

Add in flour and stir just until combined, do not beat or over mix.

Scoop into muffin pans or bread pan and bake until done.
Ovens Vary, my muffins took 20 minutes and bread should take about 50-60 minutes.

The little specks of zucchini gave the illusion of the black banana specks you usually see. The texture was just the same and the flavor was magnificent.

I am happy that the imitation banana doesn’t have the same effect on my son as real bananas. This may be a weekly recipe until I use up all my zuchini in the garden.
