Paleo Cinnamon Muffins

The hardest part of the Paleo diet for my teenager is breakfast (by they way it was her choice to do the diet, not mine. I am personally not enjoying it) She don’t enjoy eating eggs and is tired of grabbing fruit. So I searched for some recipes and came up with this although we find it overly sweet so if it is too sweet for you; you may want to scale back on the sweetener yourself. My next batch will only have 1/2 the amount.

Paleo Cinnamon Muffins

(they do not rise but a tiny bit so fill them all the way to the top) Or you can make mini muffins to make snack cakes or you can put into a cake pan and cut into squares for a coffee cake. You can even add a banana or other fruit topping to this if making it as a coffee cake, perhaps a fruit puree or some coconut whipped cream. the recipe is so versatile you can use it almost any way you want. Only thing I would not recommend is adding fruit before cooking as then the muffin itself may not hold up as it is very moist and delicate. I put into fridge after cooling and warm them up slightly before enjoying. They are done when a toothpick inserted comes out clean

Ingredients
  

  • 1 cup coconut flour
  • 2 tsp baking powder
  • 1 tsp sea salt I like pink
  • 2/3 cups coconut or almond milk
  • 8 Eggs
  • 1 cup of honey
  • 1/4 cup cinnamon
  • 1/4 cup coconut oil
  • Chopped nuts if desired.

Method
 

  1. Mix until everything is well incorporated.
  2. Heat oven to 350 degrees and fill muffin cups with batter.

This is a moist muffin/cake and as I said before it is very sweet so if you’re hankering for a sweet muffin to get you past the hard days of paleo this will surely do it.
