Single Serve Gluten Free Bread

Its Monday Morning and you are needing to make your Gluten Free child a sandwich for school only to find out your teenagers ate all the bread over the weekend.

Scrambling you can’t find bread anywhere, to add to the dilemma you can’t find any crackers to make Gluten Free stackables either.

What to do?

 

You make bread in 90 seconds!

 

Ingredients

  • 1 large egg
  • 1 tsp water
  • 3 Tsp buttermilk OR 3 Tsp milk + 1 tsp vinegar (milk subs will work)
  • 1/3 cup gluten free flour blend (Tom Sawyer GF Flour)
  • 1/4 tsp baking powder
  • 1 tsp sugar
  • Note:  make sure you use a cup for cup GF flour.  Tom Sawyer already has the xanthan gum added.

Place in the bowl and mix

Get your microwave safe dish ready by spraying it with cooking spray.  I used a small square pan to have it resemble a piece of bread; however this is the basic recipe to use in “Mug Bread” as well.

Place in the microwave for 90 seconds.

You now have bread.

Because it was a very moist tender bread I was thinking it would taste like raw dough, but I was wrong. It did not get brown but it tasted like soft bread and I found myself eating 1/2 the PB&J.  The other half was sent to school with my GF kiddo.  I then made another (its so easy, why not) and I toasted it.   That provided a nice texture and I quite enjoyed my toast.
