Valentine’s day is just around the corner and for our family it’s impossible to find treats that are gluten/dairy/soy free that taste good. This year I have decided that perhaps I will just make my own heart shaped Cookie dough treats. This started with my daughter who made them for a housewarming party then my teenager who made them for friends at school. Now they will be a Valentine’s day treat. The wonderful thing about this dessert is you can do it for any theme almost. Shape them like footballs for superbowl, dipped in white chocolate and decorated with a face or flowers, shaped as fingers for Halloween, Santa faces, cute bunny faces, sprinkles, sprayed, anyway you shape or decorate these they will be yummy.
- 2 cups gluten free flour mix
- 1/2 t salt
- 3/4 C unsalted butter, melted (Palm shortening for dairy free)
- 1 C packed brown sugar
- 1/2 C white sugar
- 1 T vanilla extract
- 4 T milk (almond milk for dairy free)
- optional mini enjoy life chocolate chips this will cause it to be more bumpy if you are shaping your cookie dough balls.
Freeze cookie dough ball/shapes for the best results before dipping.
for the coating, take any type of chocolate (milk, semi sweet, white, butterscotch) and melt with a little bit of coconut oil to make smooth and dip your formed cookie dough ball or shape into it. and place on a rack or cookie sheet to be put back into the freezer. Once set you can take out and decorate. they are best served on a chilled plate as they need to stay fairly cool.
they are easy peasy to whip up, decorating might be laboring but we don’t care what they look like just that they taste good so we generally just do balls. And we have also made mini balls and placed in ice cream. you can also make mini ones and sneak them into the movies for cookie dough bites (since the ones at the movies are not gluten free) and you can also place them into other treats such as popcorn and crumbled atop of brownies. wow the uses for cookie dough bites is unlimited!
