I saw the cutest little thing on Pinterest, they were little mini cinnamon rolls and well I just had to try them. Two problems………….1) they were not gluten-free 2) I was too lazy to put much effort into it. One of these days I am going to change my blog to the lazy baker but for now I wanted these little things without any effort.
Problem solved after looking through my pantry.
1 bag of cinnamon roll mix from Chebe I followed their recipe on the back fairly close. I added three egg yolks, 3 tbsp olive oil, 3 tbsp applesauce and about 4-5 tbsp almond milk. I wanted it moist enough to roll out. Once mixed I rolled in a long thin strip just as thin as I could get it. Its stretchy so it was hard. I then brushed it with melted butter and sprinkled heavily with brown sugar. I then rolled into a very long log. this is why you want to do a long skinny dough because when you roll it you don’t want it to be thicker (diameter) than the mini muffin pan.
Pam spray the muffin pan up pretty good and cut the roll you just made into 1/2 to 1 inch thick pieces. mine made a full pan plus a few extra that I put into a mini muffin gadget I had. Just to see if they could be done in there. They did excellent both ways.
bake at 350 for about 7-10 minutes. the brown sugar gets all gooey ooey and you want to take a plastic spoon and spoon that over the mini cini when it comes out. nuts on the bottom of your muffin pan would be yummy as well almost like a sticky bun.
Its kind of hard to write about so I included a few pictures to help but these were very very yummy, way too addicting and yes they were gone in a heartbeat. I had to sneak 6 little ones into a baggie for my oldest daughter they were going so fast, mainly by me. they were good three days later! oh how I am dreaming of these again actually. I can almost smell them baking…………sigh
