Hot pocket/calzone dough

miss hot pockets? Calzones?   Make your own!

3 eggs room temp ~ 1 Tbps apple cider vinegar ~ 1/4 cup olive oil ~ 1/4 cup honey ~1 1/4 cup of warm buttermilk ~ 1/3 cup cornstarch ~ 1/2 cup potato starch ~ 1/2 cup soy flour ~ 1 cup white rice flour ~ 1 cup brown rice flour ~ 1 tsp active dry yeast ~ 1 tsp salt ~ 1 Tbsp Xanthan gum.

combine all dry ingredients, in seperate bowl combine all liquid ingredients.  Mix them both together and let stand 5 minutes and mix again.

You are now ready to roll your dough out.  divide up into balls and roll out and fill with your favorite fillings to make pizza pockets, hamd and cheese pockets, calzones, stombolie. dough is really sturdy.  you can also make cheese sticks and dinner rolls from this.

Once prepared you can let set for an hour to promote further rising of the dough to give more of a lighter texture.

Big Hint:  dough will soak up sauce (tomato or pizza sauce etc..) so make sure you put in extra to allow for this.
