Mini S’mores

With camping season upon us here in Alaska I had my sights on finding gluten-free graham crackers, chocolate, and marshmallows.  My challenge with this is I would love for them to be dairy and soy free so that my son could enjoy them too. (turns out he just loves marshmallows plain)

I can find Scharr’s honey grahams at my local store but they are made with soy flour so I was very excited when I heard that Pamela’s was going to come out with a graham cracker as well.

I kept my eyes open since the announcement and never did I see them in my stores until 3 weeks prior to camping.   Sadly they were the minis and not the full size.  But they fit the requirements of no gluten, dairy or soy although it is processed with ingredients from a dairy source.   Chocolate and Cinnamon were the only two flavors available but let me tell you, these little things were so good.   My son didn’t enjoy them so I was left to eat both boxes all by myself and I will tell you that it was a treat.    I wouldn’t buy these on a regular basis because of their addictive nature, but they were fun to devour which took me two days.

Because I couldn’t find the full-sized ones in time for camping I experimented with the mini’s in my quest to have s’mores.   No camping trip is complete unless you have s’mores by the fire-place.

One marshmallow made three mini s’mores.    It was time-consuming, messy and just not very good.

 

Sigh………….

Good news is we ended up taking some chocolate chip cookies and we put a roasted marshmallow on top (no photos, we were eating these way too fast) and it tasted so much like a good old-fashioned s’more.  We may never do it the original way again.

 

Camping and S’mores!   It just doesn’t get much better.
