Chili, Whole-30/paleo with Bread

Every January as much as I hate it,  my husband and older kids love to do the whole-30 diet.   They then alter things to ease up and go into a paleo type diet till it just gets so boring they go back to their old ways.    Finding recipes is extremely hard since some of my family won’t eat chicken, and a slab of steak after 30 days gets mighty boring!

Being the good mother and wife I am, I started thinking.    This by far is not new to anyone, the recipe I am sure has been done a thousand with the same ingredients but after seeing my family getting discouraged with choices I came up with the following:

I paired this with bread.   Oh yes I made diet compliant bread!    Do you want to know how?

It was simple really.

add the following to a large microwave safe glass:    1/3 cup almond meal, 1 egg, 1/2 tsp baking powder, pinch of salt.

Mix and microwave for 90 seconds.(equivalent to mug bread)

This bread is not low-calorie, as almond meal is used which can add up calories fast.   This was a special treat to break up the boredom.

This may not have been the best choice for dinner when trying to follow a diet (although they are not trying to lose weight, only eating healthy) as my husband had three bowls and my picky older child had two.   Watching their face light up as they ate this was a joy.

It just goes to show you, even when you are on strict restrictions, a good hearty enjoyable meal can be done!
