Are you ready for the easiest ever chicken and dumplings recipe?
A year ago I threw this together and it became an instant hit that now I am asked to bring this all the time. Since you know a lot of times I don’t use recipes, rather I just throw it together, I wasn’t sure I could recreate it but it seems to turn out yummy no matter how I throw this together as long as I keep with the basic ingredients.
The best part of this is, you can put it all in the crock pot and forget about it.
Ready? I am almost ashamed to post this as it is so simple, easy, and hardly any prep.
Chicken & Dumplings:
1 box 32 oz chicken broth
2 cans cream of chicken soup
Left over chicken any amount depending on your preference
frozen peas and carrots
2 cups GF Bisquick
Milk (varies)
any spices you like
Pour in all ingredients except Bisquick & milk into your crock pot.
Add any spices you like. I have a spice stash since I grow a lot of my own herbs. I call it my weed and it has things like parsley, thyme, rosemary, sage then I also add in garlic powder, onion powder and old bay poultry seasoning. No measurements on spices just make sure you don’t over spice, it is easier to add more than to have it too seasoned.
If you are going to let it sit all day then use low, however if you will need it in a few hours choose high. Either way you will want to choose high on your crockpot at least 30 minutes before you serve so that it cooks the dumplings.
For the dumplings I use 2 cups Bisquick and enough milk to make dumpling consistency then just pop it into your crock pot in spoonfuls. The dumplings will thicken your sauce and make the best little dumplings you have ever tasted. Usually I put this in 30 minutes prior to eating with crock pot on high, I have also let them sit for 4 hours. The dumplings seem to turn out no matter when I put them in.
The result is chicken and dumplings that feed a small crowd. I say small because the friends I share it with usually have two bowls. Its one of those comfort foods you just want to keep eating. I love the friends I share this with and enjoy that they like my simple cooking.
If you like more veggies, add more. If you like more chicken, add more, if you need more dumplings, make more. I will say that the next day if you have leftovers it gets a little thicker so I usually have chicken broth handy to thin it out a little.
