Dream “Jello” Salad

Happy Mother’s day to every one.  This is includes the single dads that double as moms, the mom’s to be, pet mothers, empty nesters’, etc……

Mother’s are great, they pass down so many memories.  I personally have so many of them and they all include food somehow, food was just a part of who we were as a family and we shared love, heartache, good times, bad times, milestones holidays around food.    This recipe is just one of many but my all time favorite that just reminds me of who my momma was, which was a wild and crazy try anything type of person.   I could go on, but today this is about you if you’re a mom or about your mom, and I hope you enjoy the wonderful day with her in person or in spirit.

 

Dream Salad

2 (small) boxes of Lemon Jello
1.5 cups boiling water
1/2 pint whipping cream
1/2 cup chopped celery
1/2 cup Colby cheese shredded
1/2 cup drained crushed pineapple
1/2 cup walnuts, chopped.

Note: these are starter amounts.   Some people don’t like their jello chock-full, we don’t really measure however I can tell you I put in almost double the ingredients of celery, cheese, pineapple, walnuts.   I would try it with less first to see if you like it.

In a large bowl make jello and let stand in fridge til almost set.  Meanwhile whip your cream and get the other ingredients all ready while your jello is setting.  Once the jello is almost set, fold in the whipped cream and other ingredients until all is thoroughly mixed.   Let set the rest of the way.

 

When I serve this and they see celery and cheese in Jello I get some pretty wild looks.  Some people refuse to try it and others do and very much like it.    I have yet to share this recipe with anyone until today.    This will be my mother’s 16th Mother’s Day in Heaven and I can think of no better way to honor her than to share her recipe.  I think she loved it as much as I did as it was always at every special event that I can remember.
