Happy Thanksgiving

actually happy day after Thanksgiving but we still have so much to be thankful for………………We had a wonderful day and had wonderful guests who were gracious enough to eat 100% gluten-free.  This is a family that never has had to eat gluten-free food so the fact that they enjoyed our goodies and went back for seconds made me very happy and thankful that our food is very good.   I stress and worry so much when I have to bring food to potlucks or serve guests because I remember back when my daughter and I were first diagnosed with Celiac disease and we tried to cook.  OH the agony everything tasted like cardboard and it was so awful we thought we would just stop eating all together.  So I still worry in my mind does our food actually taste good or are we just use to eating cardboard (we have so many raves on our food and so many people actually make our dishes now that I know they are good but you still have that doubt in your mind)  But we have come a long way and have perfected things and by the full belly’s on our guests I think we have mastered cooking gluten-free.  Okay there are still things I can’t do like make yeast bread but my non yeast bread is a killer and it works great for our family and guests.     Maybe its my love/hate relationship with the yeast but I tasted one of my flopped non risen rolls and the yeast taste was just unbearable.  So I have no sad feelings about never trying to make  yeast dough again.

We had 4 guests and 5 of us making 9 people total.   I love having company and am torn with being happy about not having so many left overs in my fridge and sad that I can’t relax now for a full week because there isn’t enough left overs to just make my family go grab.    Sigh    I am just thankful again it was all very good food.

Our menu…………

Turkey, Stuffing, oyster stuffing, mashed potatoes and gravy, sweet potato casserole, jello salad (momma’s secret jello salad), cranberry relish over cream cheese with crackers, rolls, pickles, olives, deviled eggs, 7 layer salad, apples with caramel sauce, pumpkin pie with whipped cream, apple pie with caramel drizzle and vanilla ice cream, and pecan pie, and chocolate chip cookies.

I might be missing some things but it was a good day.  I pray that your thanksgiving was good as well.   God has richly blessed us and I am so glad we were able to bless others by cooking for and serving them.  What a joy it is to have good family and friends and a father in Heaven who cares for us all.
