Easiest Eggs Benedict I ever had

I love Eggs Benedict, but hate the process of cooking it.   Yes I am a lazy cook but my love of eating helps me to create some very unique things at times.     Want to hear about my Eggs Benedict?

Ingredients:   4 egg yolks, 1 cup melted butter, 3 tbsp lemon juice, splash of worchesire sauce, 6 frozen waffles, 6 fried eggs, and 6-12 pieces of Canadian bacon.

The first step and the most time-consuming was making my hollandaise sauce.    I don’t have a double boiler, I don’t do well with improvising stuff like that so I got out my vitamix.   I have heard any blender will do.

put in the blender 4 egg yolks, 3 tbsp lemon juice (pure not processed fake flavored stuff), splash of worcheshire sauce, 1 tbsp water and whiz until creamy.   Now the time-consuming part.  Slowly add in 1 cup of melted butter.  I did a slow drizzle until all creamy and thick.     try to resist eating it all right then and there.  You will want to have plenty for your sauce.

Easy Peasy part.   Pop a gluten-free frozen waffles into your toaster and then get a small pan and make some fried eggs.  I like mine with the yolks really runny and since Eggs Benedict usually use a poached egg I suggest leaving the yolks runny.

take a waffle,  Add a slice of candian bacon or two, put a fried egg on top and cover with sauce.   It was so rich I actually had to eat it slow.   my picture didn’t save but I did take a wonderful picture of this.

What a wonderful, yummy, rich, fattening, meal this was.   I almost want to go make another batch right now.   But alas I have a wonderful soup waiting for me which I will let you know about next.   🙂
